Frittata
Ingredients:
1/2 large onion, diced
1 Tablespoon Vegetable Oil
8 eggs, beaten
3/4 cup bacon, cooked, drained, & crumbled
salt & pepper to taste
3/4 cup shredded Cheddar Cheese
Preparation:
Preheat oven to 350 degrees F
Cook, drain & crumble bacon; set aside
In a cast iron skillet heat vegetable oil and add onion, stir occasionally and cook until soft
Add eggs, bacon, salt & pepper
Cook until firm on the bottom (about 5 minutes)
Top with cheese and put into preheated oven
Cook until eggs are completely firm and cheese is melted (about 10 minutes)
Notes:
I have used ham and sausage before and both are good. I have also added green peppers which adds to the flavor. You can really add (or take away) anything you like. This is a great versatile recipe that my family enjoys.
