Panko Chicken

Panko Chicken

Ingredients:

6 boneless, skinless chicken breast tenders

1 cup mayonaise

2 cup Panko bread crumbs (can be found in International Food Aisle)

Salt, Pepper, & Garlic Powder to taste

Preparation:

Preheat oven to 375 degrees. Butter a 9″ x  13″ baking dish. Rinse chicken breast tenders & pat dry. Mix salt, pepper, garlic powder, & panko bread crumbs in shallow dish. Put mayonaise in shallow dish. Dredge the chicken breast tenders through the mayonaise and then through the Panko bread crumb mixture (works easiest with tongs). Place in  9″ x  13″ baking dish. Continue until all chicken breast tenders are coated. Bake for approximately 20-30 minutes or until chicken juices run clear & coating is slightly browned.

*This is my own recipe that I adapted to our liking. I have also used eggs in place of the mayonaise and both turned out wonderful. We serve these with honey mustard, barbeque, and ketchup for dipping. You can use your favorite dipping sauce. They taste much like chicken tenders only better (IMHO)!

***Recipe source is unknown. I believe I got it from a magazine, but am not sure. If you do a simple search for Panko Chicken you will find many different recipes!
