Menu Plan Monday ~ 3/12-3/18

It’s that time again. Monday has once again slapped me right in the face. Where does the time go?

This weekend was a busy one for us and I am hoping this week will not be a very stressful week for us. But, my daughter is sick and will be going to the doctor. My husband starts his new job today. And, I do believe my son is trying to cut some more teeth. So, the stress level just might be elevated this week. Atleast my daughter is on Spring Break and I really hope she recovers quickly so we can get out and do some fun stuff this week!

The birthday party was a huge success and I’m hoping to have a post up on Tuesday for you all to see.

I wanted to let you all know that we tried Laura’s recipe for Sweet Aromatic Chicken. We thought it was very yummy and will be making it again. Thanks, Laura!

Now, on to this weeks menu:

Monday: Pork Chops, mashed potatoes, peas & carrots

Tuesday: Creamy Italian Chicken served over egg noodles with a salad (new recipe ~ Thanks to Tater & Tot)

Wednesday: Broiled Tilapia Parmesan, garlic butter rice and salad (new recipe ~ Thanks to Overwhelmed with Joy )

Thursday: Leftovers or sandwiches

Friday: Tortilla Tostadas, chips & salsa (new recipe ~ Thanks to UtahAlison…I couldn’t find the recipe when I went to her site today, but I have it written down if any of you want it!)

Saturday: I’m still looking for a St. Patrick’s Day style dinner (I’ll update when I figure it out)

Sunday: Bruschetta Minute Steaks*, baked basil fries, peas & carrots (*I made this once before and it was really good)

Self Feeding & Other News

Self Feeding! Who needs a spoon?

This is what they mean by letting your baby learn to self-feed, right? Who needs a spoon when it feels so good to just squish it in your hands? He sure does love his oatmeal! He also painted the walls and floor with his oatmeal! 🙂

For a girl who doesn’t win anything I am sure feeling lucky this week! I have two, yes two, books coming from two different bloggers!

Gail is sending me this book to read. She offered it up on her blog to anyone who might be interested and I was the first to respond. I love to read and am trying to expand on the authors and books that I read. Thanks, Gail!

This week on my Menu Plan Monday I decided to try several new recipes. Well, they have all been tested and some were keepers…some were not!

The Maple Salmon is definitely a keeper. It was very good.

The Creamy Baked Chicken is also a definite keeper! Delicious!

The Hearty Hash Brown Dinner was not a hit at our house. I didn’t like how the hash browns turned to mush. Oh well, the baby sure did like it! But, we won’t be making this again.

The Zesty Barbecue Chicken also not a hit! I think it was the Italian Dressing that made it a no-keeper. I love Italian dressing, but it just wasn’t for this recipe.

The Roasted Potatoes were scrumptious! We all loved them and they will definitely make it into our menu rotation quite often. I think we might experiment with the dressing on them, too! Delish!

Last Minute gifts & goodies

This is what we were doing yesterday!


We made simple picture frames from popsicle sticks – painted them & wrote a message on them. These will be the gifts from the kids to grandparents, aunts, & uncles!



We also made our first ever chocolate truffles. Thanks to Kelli for sharing her recipe & photos of her delicious truffles. I just couldn’t resist and I needed to use up what I had left as far as baking goes. They were super easy. We rolled ours in crushed peppermints, colored sprinkles, red sugar, and confectioners sugar. They are very yummy!


Hope you all have a very happy Christmas Eve eve! I’m out to finish up my list and get a few groceries. It should be an interesting day! I’m not a big fan of the holiday crowds, but we forgot decided at the last minute on a couple family members gifts! Wish me luck!!!
